Summer Lovin’ Beet Soup

Ingredients:
~ Three red beets: chopped
~ One bunch of scallions: dice up bulbs to stems
~ One yellow pepper diced
~ One avocado chopped
~ Morton’s Salt Free Cajun Spice: optional
~ Dollop of almond milk sour cream (or regular): optional
~ Zest of lime: optional
Directions:
Chop all veggies and place in a foil tin or other pan safe for roasting.
Add a sprinkle of mushroom seasoning, cajun spice, and a pour of the oil of your choice.
Mix well
Then roast at 400 for 20-30 minutes.
Add avocado.
Vitamix until smooth.
Can be served warm or cool/cold.
Dollop with sour cream, and lime zest as desired.
